Ground Turkey and Sweet Potato Hash

Last week, I posted in my social media story about one of my favorite dishes; our ground turkey and sweet potato hash. A lot of people commented and asked me how to make it so I thought I would try and blog about just this recipe. I am by no means a food blogger but this recipe is too good not to share. This dish is a staple in our house and something we make at least once a week. It is the perfect balance of protein, carbs and fat. Here is how I do it.

What You'll Need

3 medium sweet potatoes

2 tbsp of olive oil

1 tsp paprika

1 small white onion

1 small yellow pepper

2 cloves of minced garlic

1 pound of ground turkey (93% lean)

Dash of salt and pepper

1/4 tsp of Cayenne Pepper

1/2 cup of mozzarella cheese

How to Make It1. Turn the oven on to 375F degrees and let it preheat while you chop.

2. Peel and dice the sweet potatoes into 1/2 inch cubes. Once cut, place them on a cookie sheet with aluminum foil for easy clean up. Sprinkle on top of the potatoes 1 tbsp of olive oil, paprika, salt and pepper.

3. Once the oven is preheated, place the cookie sheet on the top rack for 25 minutes.

4. Dice the onion and yellow pepper into tiny pieces (1/8 of an inch) and mince the garlic.

5. Place the remaining olive oil in an oven proof skillet. Saute the onion and pepper until just tender.

6. Once tender, add the minced garlic and saute until you start to smell the garlic.

7. Add the ground turkey into the same skillet and cook until no longer pink. Season with salt and pepper.

8. Drain the fat off of the ground turkey mixture in a strainer.

9. By this time the potatoes should be done. Remove them from the oven and put half of the potatoes into the skillet you just emptied.

10. Put the turkey mixture on top of the potatoes in the skillet and then add the remaining sweet potatoes. Mix and even out the hash in the skillet.

11. Sprinkle with cayenne pepper and mozzarella cheese. Cover with a lid and cook until the cheese starts to bubble up (usually 10-15 minutes).

12. Remove from the oven and serve immediately. That cheese will be nice and oozy coming out of the hot oven. Serve with a side of your favorite veggies.

This recipe is one of the longer ones we make but it still only takes about 45 minutes; 10 minutes of prep and 35 minutes of cooking. We have never tried any substitutions, but I imagine this would be really good with ground beef, white potatoes and red peppers. Maybe instead of mozzarella you could do cheddar cheese.

Once you master this dish, this will become a go to meal! I love how easy it is to make and how tasty the sweet potatoes make the ground turkey taste. What is your favorite go to meal? Share below in the comments. #food #sweetpotatoes #turkey #healthy #rp
